MIOROSHI DEBA BŌCHŌ   身卸出刃庖丁

Japanese word “mioroshi” can be translated as “mass fillet knife”. 

Mioroshi knives belong to a rare category of Japanese single bevel knives – knives that are intended to be used for multiple tasks. Mioroshi is commonly used for breaking up fish, like a deba, and it is also used for slicing the meat, like a sashimi knife.

Mioroshi deba has a long blade, often 24-27 cm and longer. The blade is thinner and narrower than a deba blade of the same size would be. But, if compared to a yanagiba of the same size, mioroshi has thicker, wider and heavier blade.

Mioroshi is a single bevel knife.
