RYŌ-DEBA    両出刃包丁

A speciality of the island of Shikoku. Ryōdeba is a deba knife with a double grind edge. Even though the blade of ryōdeba has double bevel geometry, it is very thick, often as thick as a single bevel deba of the same size.

Ryōdeba is used for fish filleting tasks, cutting meat, breaking up poultry, as it can easily cut through small bones and joints.
