SAKEKIRI BŌCHŌ   サケ切包丁

Sakekiri is a specialised knife used for handling large fish, like “sake” – Japanese salmon. The blade of sakekiri is designed to be used for slicing large fish into fillets – cutting through skin and bone alike.

The shape of sakekiri resembles the shape of deba, but the blade of sakekiri is a bit wider and also thinner, than the blade of a deba of the same size would be.

Sakekiri is a single bevel knife.
