HON-DEBA BŌCHŌ   本出刃庖丁

Japanese kanji 本 (hon) is translated as “true” or “real”. Hon-deba knife is the heaviest type of deba. Generally it is a bit thicker and heavier than a more typical deba of the same size would be.

Hon-deba knives are often forged with a bit more care and the steel that is used for manufacturing of hon-deba knives is mostly high grade Japanese carbon steel. Hon-deba are mostly used in professional cooking, mainly used for cutting fish bones, breaking up fish, working with seasfood of large caliber.

NOTE: knife seen in the pictures above is a left handed knife.

Hon-deba is a single bevel knife.
