HONEKIRI 骨切り

Honekiri can be translated as “bone cutter”. Honekiri is essentially a Japanese adaptation of the western chopper knife.
Honekiri is commonly used for cutting meat with bones, with it’s heavy blade it can even be used for breaking bones. The use of this knife is not only limited to life animal stock butchering tasks – honekiri can be, for example, very efficiently used for cutting a chicken in half.
Honekiri is a double bevel knife.
