KASHIRA OTOSHI  頭オトシ

“Kashira Otoshi” can be translated as “beheader”. It’s a solid knife that is used by professional butchers for cutting off heads from life stock animals (cows, pigs etc.).

Apart from that, this knife is commonly seen being used by fishmongers at, for example, Toyosu fishmarket in Tokyo – for beheading and breaking up the head of maguro (tuna fish).

Kashira Otoshi is a double bevel knife.
