BUTAKIRI  HŌCHŌ  豚切り包丁

Butakiri is a rural knife that is used in home kitchens for cutting “buta” (pig). “Butakiri” is translated as “pig cutter”.

Mostly kurouchi finish on these knives as they were not intended to be used at fancy restaurants. It is a very rare knife nowadays, finding this knife for sale is not easy even in Japan.

Butakiri is a double bevel knife.
