HONESUKI-MARU  骨スキ丸

Honesuki-maru is a butchering knife that has originated from Kansai region. Honesuki-maru is Japanese adaptation of the western butchering knife. The blade is double grind, but highly asymmetrical. Closer to the handle the edge kept unsharpened, as this part is used for scrubbing meat off the bones.

Other names for this knife are Hankotsu はんこつ and Sabaki Nishi-gata サバキ西型

Despite its asymmetric blade geometry Honesuki-maru is ultimately a double bevel knife.
