KATSUOBUSHI KEZURIKI   鰹節削り器

Katsuobushi kezuriki is a kitchen tool used for scratching dried pieces of “katsuo” (bonito fish) into very thin flakes.

Kezuriki is used in the following way: the kanna plane is places at the top, edge facing up and a piece of dried bonito is shaved by hand with the plane. The ready shaved flakes are dropping into a removable box, that is located straight under the kanna plane.

The box is issued with a wooden lock, the lock is meant to protect the blade of the plane during storage.
