TŌFUKIRI 洋出豆腐切包丁

Tōfukiri is a knife that was traditionally used for cutting Japanese silken tofu. It features a very thin blade and suits well for cutting delicate tofu cleanly.

Nowadays these knives are almost exclusively made from stainless steel, because of the fact that a knife made from “hagane” (carbon steel) would pickup rust easily and would transfer the taste of steel to the delicate silken tofu. The knife seen in the picture is forged during the period that pre-dates mass stainless steel production and it’s blade is forged from brass, instead of steel.
