YŌKANKIRI 羊羹切包丁

Yōkankiri is a knife is not that common nowadays, but it was traditionally used for cutting yōkan or other similar Japanese candy & sweets.
Yōkankiri looks a bit similar to udonkiri, with the difference that the edge line is straight, and the heel is leveled with the top of the handle. The round slot is also generally smaller than the one commonly seen on udonkiri or other menkiri knives.
Another name for this type is Kashikiri 菓子切 包丁
Yōkankiri is a double bevel knife.
