UROKO-TORI HŌCHŌ (GYŪTŌ) うろこ取り包丁

Gyūtō shaped knife that is specialised for scaling fish. The backside features a serrated area that can be used for scrubbing off scales from fish, prior to filleting. Different variants of these knives exist: different blade lengths, profiles might vary, serrations can also vary considerably.

Uroko-tori gyūtō hōchō is a double bevel knife.
