CHŪKA BŌCHŌ 中華包丁

Chūka bōchō is the Japanese name for Chinese cleaver. Larger, rectangular shaped, thin bladed knife for vegetable cutting and general kitchen use. Typical all rounder, used for pretty much any job in a Chinese kitchen. Despite the size of the blade it is not suited for chopping duty, as the blade is often only 2 mm thick. There is a considerable number of Chinese cleaver variants, that vary both in shape and size of the blade.

Chūka bōchō is a double bevel knife.
