KOMA GIRI 小間切

A versatile knife used for cutting meat, fish, vegetables etc. into small pieces. Often used for filleting – although it is not as thick as yodeba, it is thick enough to handle large fish. The blade of komagiri is much wider than the blade of a common gyuto knife.

Komagiri is a double bevel knife.
