YŌ DEBA 洋出刃

Yo deba is a gyuto shaped double bevel knife that has a much thicker blade than gyuto. Because of the heavy and durable blade, yo deba is the ideal tool for heavy duty tasks, which a normal gyuto will not necessarily be able to handle. Yo deba is mostly used with meat, yet it is thick enough to be used on crab and fish as well.

YŌ DEBA (ASYMMETRIC VARIANT) 洋出刃

Not a separate type, just a rare variant of yō deba – a variant with a heavily asymmetric blade. While the grind of the blade is heavily asymmetric, the edge is still sharpened on both sides. This variant is in any case a very rare sight.

This yō deba variant is a single grind knife with a double bevel edge.
